Christmas Ham - Recipe
Difficulty: Easy
Prep Time: 5-10 minutes (soaking the wood chunks and pour the packet of glaze into a bowl)
Cook Time: Expect 10-12 minutes per pound.
Smoker Temp: 225 - 250 F
Meat Finish Temp: 160-170 F

Some call this a double smoked ham recipe as most spiral hams that you purchase already are smoked during the curing process, but I'll be damned if I taste it. That is the reasoning for the lighter smoking chunks, in case you get one that you can taste the smoke on, this won't overpower the smoke flavor. Also, remember with this cook your ham is already cooked, all you're really doing is warming up the meat.
Instead of making a homemade glaze, I went with the premixed package that came with the ham. Figure I bought it as part of the ham, why go through the trouble of mixing more? Well, the reasoning for that would be to have more glaze than the package provides, but the package is enough. Depending on the size of your ham, plan the glaze accordingly. The last glaze you'll want to apply 15-30 minutes before pulling the ham off and this should be a liberal coat of glaze.

Soaked Apple Smoking Chunks
Directions
1. Bring cooker to temp, between 225-250. I smoked mine at 225
2. Once cooker is up to temperature, place the ham on the grill
3. Every 30 minutes during the cook, glaze the ham. Start from the top and brush down the ham lightly. Tip: Be quick about it as to not raise the temperature of the smoker.
4. Last glaze should take place 15-30 minutes before pulling the ham off the grill and whatever you have left, put on the ham.
