Pork Chops

 
Difficulty:  Easy
Prep Time:  10 minutes (At most)
Cook Time:  10-20 minutes
Smoker Temp:  350 - 400 F
Meat Finish Temp:  145 F for Medium, 155 for Medium Well, 165 F for Well; 







Ingredients
  • Pork Chops (Bone In or Boneless; For this cook I used bone-in pork chops)
  • Meat Church Honey Hog Rub (You can substitute your favorite rub, but the Honey Hog is fabulous on Pork Chops)
  • Hickory Smoking chunks 
    • Note:  This is a fairly quick cook, so the smoking chunks may not add a whole lot
Grill Setup
  • Direct Heat on Pit Boss K22
  • Food placed on bottom rack
  • Hickory Smoking Chunks
Prep
There isn't a whole lot to prep with this cook.  You get the pork chops out of the packaging and place on a baking sheet and apply the rub.  If there is any excess fat you wish you trim off, that is strictly up to you, but for this cook the pork chops didn't have any fat that needed trimmed.  

As always, I like to apply the rub to my food before starting the grill.  This gives the meat extra time to absorb the rub that you apply.  (Chef secrets)  

Grill
  1. Bring grill up to temperature between 350-400 F, setup for direct heat
  2. After 4-6 minutes of the pork chops being on the grill, rotate them 90 degrees to get the grill marks.  
  3. After 4-6 minutes, flip the pork chops
  4. After 4-6 minutes, rotate the pork chops 90 degrees and check the internal temperature. 
  5. Leave pork chops on grill until they reach desired temperature.  According to the USDA, pork is ready to eat at 145.
  6. Let stand 5 minutes and serve hot with some BBQ. 
Notes
  • Having a half / half setup will allow you to cook the pork chops at a lower temp and over indirect heat to absorb more smoke flavor.  If you are able to utilize this setup, you can cook over the heat deflector at a low temperature and then over direct heat to sear the pork chops
  • My cook was done at roughly 380 F, and I left the pork chops sit on each side for about 9 minutes, rotating 90 degrees at about 4.5 minutes a side in an attempt to get the criss-cross grill marks.  I pulled the pork chops at a temp of 145.
  • This is a great cook to sit out on the deck, listen to some music and smoke a cigar.  One where you don't really want to leave the grill unattended for too long.
