How To - Season and care for Cast Iron Accessories

Seasoning:

Seasoning your cast iron accessories can be done in your kamado or inside in the oven.  Using a rag and peanut oil, coat the entire cast iron surface (both sides).  Place them in either the kamado or oven set to 350 for around an hour.  After an hour, turn off the oven or shut the vents on the kamado and let the cast iron cool naturally.  Repeat this process a second time for a more solid seasoning.

Before each use:

Assuming you are starting with a clean and already seasoned cast iron grate....  Light the kamado and put the cast iron in place and let some of the old oil burn off.  Scrape the grate with a wire brush and apply a thin coat of peanut oil.

After each use:

Brush the leftover food off the cast iron with a wire brush.  Once they are cooled down you can apply some spray oil like Pam or use a rag and apply some peanut oil to help prevent rust.

Storage:

Prior to storage, cast iron cookware should be clean and completely dry.  You want to store them somewhere dry, preferably indoors.  Moisture over time is what will cause them to rust.  If you are storing multiple pieces of cast iron and stacking them on top of each other, place a towel or paper towel between them to prevent scratches.
